One of my favourite things to do is visit my friend Kate to see what she has been whipping up with the veges she gets each week from the plot.
She never ceases to amaze me with how she uses our produce in often really simple ways that had never crossed my mind. I asked her if she wouldn’t mind sharing some of her recipes with us and she was more than eager! This one is my all time favourite thing she makes with kale (ok not all time – her balsamic kale chips are actually to die for too!!)
- 1/2 cup Kale
- 1/2 cup Basil
- 2 cloves of chopped garlic
- 1/4 cup Olive Oil
- 1/2 cup chopped walnuts (or any other kind of nuts or seeds)
- Sprinkle of parmesan
- Salt & pepper to garnish
I make my pesto with my mortar and pestle as I love it quite chunky but if you want a smooth pesto add all ingredients to a food processor (or even a Nutribullet if you have one!).
Chop up the basil and kale finely on a chopping board then using a mortar and pestle, pop in all the ingredients and grind to the consistency you want. I generally use walnuts but can use any nuts you have in the pantry, or even seeds. You can add a bit more s and p or parmesan to taste and voila, that’s it!
